this is good. trust me. i used to hate squash untill i tried this.
take as much summer squash as you think will be eaten. butternut works good too. cut it in half. a chain saw might be nessary if its big enough. any way to prepare any squash for cooking put it shell and all in a cookie sheet with water face down. put them in the oven at 350 for 20 mins. this will soften them up a bit so you remove the shell and chop them to peices. now cook them the same way you would mashed potaos.
sautaee bread crumbs/crutons, butter, onions, spices in a seperate pan. once you are satified with that, grate some cheese into a seperate bowl. two cups aughta do it. finish off your squash. drain, mash it, then add the sautee. mix it up. then add the cheese. slowly but surely combine them in a casserole dish. save some cheese for the topping. cook the squash again at 350 for 20 mins. you can add the cheese topping before or after you put it in the oven. either way its gonna melt.
for spices you can use whatever you want. i used oregano, baisel and thyme.
