I figure since I am doing this I will share some of the things I'm eating to help other if they want. Even if they don't want to lose weight this is yummy.

I will do everything in single servings and really easy.


PESTO CHICKEN MEDALLIONS

1 6-8oz chicken breast
1 tbs fresh chopped parsley
1/2 cup sliced sun dried tomato
2 tbs of pesto


I am doing these things as easily as possible so I recomend buying a jar of pesto. It will have a fairly high fat content but it is from the olive oil so used in regular amounts it is actually very good for you.

Microwave the chicken for about 4-5 minutes or until it is mostly cooked through. Cut it into medallions about half an inch thick. Put that, the pesto, the parsley and the tomatoes in a pan that has been heated on medium heat.

Cook it. Seriously, it's that easy and it's good for you while still being WAY yummy.

Oooh, there's a lot of healthy stuff out there that tastes really good.

Hm, I like the chicken salad my mom makes. Super good!

It's chicken breasts cooked in E.V.O.O., seasoned with well...seasoned salt. Just throw it over a salad kit, and you've got an instant salad. Super simple, super tasty. I like it. smile )

I'm so glad you made this thread. <3333 I adore cooking~
I never use mesuring cups or spoons, so these are just an estimate.
This is a meal I cooked last weekend for my family~
Shrimp with fruit, asparagus and rice.

Shrimp-
Marinate in red wine for about 20 minutes.
Heat up a pan or wok, add a bit of peanut oil.
Cook shrimp with blackberries & tangerine wedges (cut
in between the skin-casing, so you're left with the pulp).

Rice-
1 1/3 cups of wild and/or brown rice with 2 cups of water~
Cook on stove until it boils, turn down to low heat for 45
minutes.

Asparagus-
White or green asparagus, cook in a pan with a bit of olive oil,
crushed pine nuts and chopped garlic for 12~ minutes on
375°f.

LOL I don't measure either but I sort of stopped what I was doing while I was cooking and checked to see what I was putting in for the benefit of others.

The shrimp thing sounds really good.

I LOVE COOKING TOO!

Omg I hope more people respond to this because I have to actually cook for myself now. Please keep posting ideas!.

And unfortunatly while I have tasty dishes I don't have nececarially healthy ones.

Kidding. No need to attack.

Unfortunately, I don't have any recipes springing to mind -- I haven't slept for a few days, as I'm sure some of you can understand -- But one thing I will suggest is opting for kosher foodstuffs. From what I understand, they're a hell of a lot better for you. I'll probably make the jump sometime soon, myself.

Anyway.

I'm off to Nightmare Land. Wish me luck. <3

Lamb Burgers

4oz bulgar wheat
7fl oz hot chicken stock
9oz lean minced lamb
1 small onion, finely chopped
1 large carrot, finely grated
large handful of fresh mint, finely chopped (optional)
1 egg, beaten

The wheat and the grated carrot take away alot of the fat and calorie content of the burgers. So some guilt free burgers for you guys.
