Hi;
Looking around a bit and it seems like a pretty creative bunch. So, my question is: how many like to create their own spice mixes, and how many prefer to save time by using packaged mixes? Examples of packaged would be those little jars of curry powder, or an envelope of taco seasoning.

I wanted to vote for both.
I have a taco seasoning mix and a rub for pork chops that I make myself. But, I don't mind using a packaged mix if I'm in a hurry or the recipe calls for one.

me too! Looks like I can't edit the poll, though, or I'd add another option for Both.

Usually, neither. I mix mine on the spot from a huge spice collection. Get's a little confusing sometime's, though. But I just add some, taste, see what else it needs, taste. Lot's of tasting. cool But I guess you could say self mixed.

Have you ever tried cooking by "feel"?
Sometimes I don't think about "taste" so much as what part of my tongue needs to "feel" the seasoning more? Sweet? Salty? Bitter? Meaty? Sour?
You could think of it like music too. High notes, low notes, middles.
When I'm improvising, sometimes it helps me to think of things in a different way.
But then, my brain must be shaped like a pretzel anyway.

Oh, I do both. For Italian, I like to mix my own. I generally use as many fresh ingredients as I can. I like a little chopped fennel in my pasta sauce, and fresh basil leaves (grow my own, freeze the extra).
But I watch "Campfire Cooking" on RFD channel, and there ad for their stuff got me looking on the web. They have some great cajun and other spice mixes, and they come in these little metal jars with magnets that you can stick on your fridge. ! I love em. They are good mixes, but I only get the mixes I'm unfamiliar with, and so far they've been great.
I NEVER use garlic powder... tastes burnt to me. I do get the chopped garlic in olive oil sometimes, but I prefer fresh garlic. I grind my pepper and even sea salt sometimes.

I'd pick both, but I tend to lean toward pre-mixed seasonings like rotisserie chicken seasoning. I think seasoned salt counts, too. I add some crushed red pepper when I want things to be spicy.

I'd much rather make my own spice conoction. Except there is this one bagged spice for steak...it's like Black Peppercorn Montreal Steak Marinade...I cannot make a homemade version of it that comes even close to it.

I'd say packaged, because some days I'm to lazy to experiment with herbs and seasonings. Although, there have been times when I mix pre-packages. But, I'm more of a pre-mix girl.

I would have voted for both. I usually mix things to my taste but it's always good to have premixed stuff too.

I think that depending on if i am just cooking for me and ppl who i know what they like (spicy, not spicy. etc) or for a social where lots of strangers will be eating. For people I know i mix my own to fine tune it directly to what i and my family likes. If i am doing it for somethin else though, i use premixed. That way more ppl like it in my opinion.
