Normally a ranger can cross-class with anything.

yeah but if we're starting at level 7, I can already have 2 levels of assassin and 5 of rogue.

Each level you decide which class to take and only get the benefits for the selected level of the selected class. Example: Gwydion the 2nd level Wizard decides she wants some Rogue training, so when she reaches 3rd level she add one level of Rogue. She gets all the benefits of being a 1st level rogue (except for the x4 skill points) and none of the benefits of a 3rd level Wizard, since she is still 2nd level in that class.

What happens, basically, is that you sorta add the two classes together when you multiclass. Say you're a first level fighter. That means your base Fort save is +2, and your base Ref and Will are +0. If you take your second level in rogue, your base Ref save goes up to +2 (because that's the 1st level rogue's base Ref save) but your other two saves don't change. You get the special abilities at that level, so a fighter 1/rogue 1 would have the bonus fighter feat from fighter 1 and sneak attack +1d6 from rogue, among other things. Your hit points you gain at level up depend on what class you take a level in. That fighter 1/rogue 1 would have 10 + his Con mod for first level, and would roll a 1d6 and add his Con mod for his second level, because that's the rogue's hit die.
