I personally I like Tomoe over Kaoru since Kaoru seems extremely Bi-polar. I fear for Kenshin when Kaoru-dono goes from super sweet to super angry.

It's important to note that Kaoru reacts only when something challenges her insecurities. She lost her mother at a very young age, so her father raised her as he would a son.
Back then women were judged on how well they could keep house, so when things like her cooking abilities are insulted, it actually questions her womenhood and whether she is considered wife material (which matters to her very much in front of a certain rurouni). As a cultural reference, raccoons(tanuki) are pictured in popular tales as *ahem* very male figures waving a stick. So Yahiko's jokes also question her womanhood.
She also gets angry when she doesn't know what to else to do. Quite often she yells at Kenshin when he is brooding or depressed, like in the Jin-eh arc. She may seem mean, but if you watch Kenshin's face he goes from depressed and fearful of rejection to happy after she yells at him.
Then there is her fear of being abandoned. Her father left for the Seinan War and was killed. We know that the war ended six months before the start of the series, and he was likely killed sometime before that... It's safe to say she has had to take care of herself for around a year, during which Gohei Hiruma started his crusade of revenge. It's quite understandable then why she gets very emotional over the prospect of her new family leaving.
I also think Kaoru's behavior reassures Kenshin that she is comfortable and not afraid of him. It's ridiculous to think he can't dodge her attacks. He must be allowing himself to get hit on purpose.
