Just a log of all the past classes I've done in NMA, for my own records and for anyone that's curious.

The Allergy Challenge (Grendel)

At university level, culinary was half book work and half application. She much preferred the application side of things, but she needed to make sure her students were prepared. At this level they should be here because they want to, and if they pursued jobs in the field once they were out of here this was stuff they needed. Especially on something like this that could harm a client or guest if not handled properly. Today, they were in the class room instead of the training kitchen, and she watched as they filed in. As soon as class started she gave paperwork to the person sitting in the front of each column and asked them to take one and pass the paperwork back.

"Ok, let's get right into it today. Allergies. The bane of every kitchen cook, believe me. But what to do when you know a guest has a severe allergic reaction to a common food ingredient?

For class today you've each received a document explaining how to handle a guest with an allergy request, as well as a hypothetical situation where you have a guest with an allergy. You're going to give me a written explanation about at least one precaution to take in the kitchen while handling their food as well as a meal idea that does not contain anything they might react to."

She waited for the collective groans and slumped shoulders, and raised raised her hands.

"I know, but this stuff is important. While you're working on that I'm going to be writing on the board what to do if a guest is already having an allergic reaction, how to tell when a situation is life threatening and what steps to take to minimize the risk of allergic reactions for your guests or clients."

Helpful Materials

Tips for Cooking for Someone with a Food Allergy
Recipe Substitutions (replacing allergen foods with something else)

What your student needs to do

  1. Roll a d4, each number is associated with a common food allergy.
    1, Milk (dairy) allergy.
    2, Nut allergy.
    3, Wheat (gluten) allergy.
    4, Egg allergy.

  2. They will need to find a meal that either replaces all ingredients that would cause a reaction (and list what they'd replace them with) or find a recipe without any of the allergens for their guest.
  3. Include one precaution a cook should take before or during cooking the meal, and why it's important. (The first link in the Helpful materials section has several, but for an example, sterilizing the work surface to avoid cross contamination).
  4. Include a short rp response of them turning in their homework.

Rules:
  1. Use the form below when turning in this activity, rolling a d4 as you post.
  2. use the d4 to indicate which allergy your student will have to work with.
  3. Edit your form to work with the answer the dice gave you.
  4. Your homework entry should be at least a few lines, and their rp response of them turning in the homework should be at least a line or two.

Juniors:
Design a Dinner

She was holding a box old cooking magazines, having kept so many in her lifetime. The seniors were already done with them for their project, and the Nine knew, she didn't want to take them home. At least now they'd get a second life as a teaching aid, and getting to destroy something always seemed to be a favorite with the slightly younger crowd. She indicated that the students should take a seat in the first half of the classroom rather than bother with the workstations. They wouldn't actually be doing any cooking today.

"Alright everyone, today's going to be a bit different. Instead of going over more safety and handling lessons, or yet another worksheet on measurement conversions, we'll be doing something a bit more enjoyable. Everyone here is going to design a dinner plan as if they were having guests. Maybe your whole family is coming over, or maybe it's a romantic setting for a potential significant other, or others, or you're just going to entertain a party of your friends. I want to see it, I want to hear why you're making the choices you do. Simple or complex, 10 course meal or just a pot luck stew, there's no wrong answers here. Feel free to look through these old magazines and rip out pictures or recipes if that helps you. You're welcome to draw or just describe your meal plan as well. You have until the end of class."

Rules:
  1. Use the form below to complete the activity.
  2. Feel free to link recipes or share pictures. Please put all images together under a spoiler if you don't want to link them however.
  3. You should include a brief reasoning of why they chose the meal they did, (with whatever images or recipes they clipped out, drew, or described attached). At least a hundred words.
  4. You should include at the minimum a line or two of them actually turning the homework in.

Seniors:
Cookie Cutter

Sokeri leaned back on her desk, arms crossed, as she watched the students filtering in. It was odd to be teaching a class in such a formal setting, rather than a new employee on the fly. It was an honor, of course, and she was definitely excited at the prospect of working with students, but there was definitely concern too. This side of the room had simple desks, but the back half contained work stations, similar if more simplified from her classroom at Grendel. They'd get to that later though, better to have everyone sit down and introduce the project for the day than having to talk over the clatter of kitchenware.

"Alright class, in light of the holidays we're going to be doing something fun and something you can share with your classmates. I want each of you to look through one of these Home and Hearth magazines," she pointed to a stack of them on her desk, all Solstice editions from past and present "or this cookbook" she indicated a thick, old book of cultural recipes next to the magazines, "and find a cookie recipe you'd like to try making in class. There should be enough for everyone to try, and if there's leftovers you're more than welcome to take them with you. Please remember your kitchen safety, I'll be walking around to keep an eye on everyone and offer help, feel free to ask if you need anything. Each workstation should have just about everything you'll need stocked in the cupboards."

Rules:
  1. Use the form below when turning in this activity, rolling a d4 as you post.
  2. use the d4 to indicate how well your character completed the activity. (1, the cookies burned. 2, something went wrong, but they're still edible. 3, they came out alright! 4, by the Nine these are the best cookies I've ever tasted @.@ <3)
  3. As long as you fill out the form entirely and use the dice roll to write you're response, you'll pass. Whether or not your cookies burn, the lesson is to learn how to follow a recipe. Just edit in your rp response after rolling.
  4. If you forget your roll, please don't delete your first post. Just post again with your roll.
  5. If you do not edit with your rp entry by the time ends, your character will fail the class.
  6. Your rp entry should be at least a few lines telling me how they like working around the cooking station, and how the cookies came out. Feel free to include trying other students' cookies (or make a personal rp for that in the roleplay subforum if you like).

Juniors:
3 Ingredient Challenge!

She waited for everyone to take their seats, grinning widely at the head of the class. This activity was normally a good introduction to cooking more than just prepackaged stuff. Simple, fun, and sometimes quite messy. But that was part of the responsibility of cooking; cleaning up. When the chime sounded for class to begin, she clapped her hands loudly to gain their attention and paced in front of her students.

"Okay everyone, we're actually going to be doing some cooking today. There's a catch though, because of course there is. Whatever it is you decide to make, it can only have three ingredients, total. That's it. It can be any sort of meal, or snack even, but you just get those three ingredients. You can find a recipe or make up your own. After you've decided what to make and have gotten it approved by me, go ahead and use one of the stations in the back of the class. If your recipe requires cutting or heating, I'll be assisting, or at least watching while you work. Please feel free to ask for help or ask questions."

What your student needs to do:
This activity is done in two parts, the first is picking a recipe or making one and getting it approved.
The second part is actually attempting to make it. So you will be posting twice for this activity.
Part 1
  • Use the form below.
  • Link your recipe. If you don't have one, please describe what it is, how to make it, and if you like you can even provide a picture (either of your own making or google-fu).
  • Your rp response doesn't need to be long, but should be them deciding what they want to make, and approaching Sokeri for approval.

Part 2
  • After you post the first part, I will respond to your quote in character.
  • If your recipe requires cutting or heating, I will have Sokeri stand watch or even offer assistance. If not, she'll just give you the nod to go ahead.
  • You will then be asked to write an rp response of about a paragraph of your student attempting to make their 3-ingredient project. You can include the result, how they feel about it, and the like
  • They may share with the class, and/or take leftovers home afterwards to share or keep. Any rp other than the class activity should be done in it's own rp thread however.

Seniors:
The Cake Mistake

This was a fun one, and she smiled as her class settled in. Each table already had a cloth covering it as well as a rectangular pan. The pans were covered with wrap at the moment, to protect the sheet cakes already baked and cooled in each one. Each table had a different flavor, and some made it a point to switch tables to a more preferred taste. She gave them a few minutes even after the bell to settle in before getting everyone's attention.

"Today is going to be fun. Fun and messy. Very, very messy."

At this point she walked up to the first table, unwrapped the pan, and shook out the sheet cake from a decent height. It hit the covered table and split from the force, crumbling.

"After everyone washes their hands, each table is going to destroy their cake. And with the crumbles, you're going to make something else. The cakes are large enough that each person at the table should have enough to try something on their own, but you're free to work in partners or even teams of three if you prefer.

The idea here is to come up with a way to salvage a ruined cake by making it into something else entirely. Good luck, and have fun!"

What your student needs to do:
  1. Use the form below when turning in this activity, rolling a d4 as you post.
  2. The d4 is only used to indicate how well the project turned out for that individual. You will not be graded on it. The higher the number, the better the result or the more your student liked it.
  3. Each student must post their own form, regardless if they're working with someone else. You are welcome to refer to each other in your post. However, you're only posting once. Feel free to make a private rp thread if you want to continue after you've completed the activity here.
  4. If you forget your roll, please don't delete your first post. Just post again with your roll.
  5. You may link a recipe or come up with your own. If you come up with your own please describe your concoction, or even draw it, as well as explain the steps to make it.
  6. Your rp entry should be at least a few lines.

Hint: If you feel lost or confused, google "How to salvage a ruined cake" and look at all the creative things you can do with a cake that's fallen apart!
