what vocation do u have to be to "hack away like a demon"?

Sounds like Hatchet Man, which has a higher chance of a critical hit than normal. You get it by leveling up Axes with a Gladiator or Ranger. You can get Thunder Thrust from leveling up Lances, which is just as good as Hatchet Man. Any vocation that can use lances, like warriors and paladins, can learn it.
