Banana Bread!!!

Today I was looking for something to snack on, when I saw the bananas in the freezer. They'd been there for a week or two, since the bf's rents went on a weekend vaca and gave them to us so they wouldn't go bad. We already had bananas, so for whatever reason my boyfriend put them in the freezer.

When I saw them, I remembered that my aunt always saves her brown bananas to make banana bread! So I went on the search for a recipe. I found two. One that was extremely simple, but didn't have all of the ingredients I thought is should have (no cinnamon? Whaa?). Another that was a tad complicated, but had the right ingredients.

So what did I do? I cobbled them together of course. It can also be easily made non-animal for my veg*n friends here.

On to the recipe:
- 3 RIPENED bananas
- 1/3c melted butter (can be swapped for vegetable shortening)
- 1/2c packed brown sugar
- 1/2c sugar
- 1 egg (I've read that you can swap this for bananas or apple sauce in baking)
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 1/2c flour
- 1/8 teaspoon salt

Preheat your oven to 350degrees F. Mash the bananas, mix your wets, add the sugars, then add the dry ingredients slowly, mixing a little bit at a time. Grease a loaf pan, pour the batter, shake to distribute and then slap it in the oven for 40 mins (give or take depending on your oven, it should be brown and solid when done.) Then let it cool and dig in.

Normally anything I make from scratch gets a picture taken, but I was doing 20 things at once. We had it for dessert and my boyfriend's mom texted me to say that it was the best banana bread ever! So, it seems that it was a success. I certainly loved it, and I hope you all will too!

I'll give that a try! I made banana muffins the other day.. they were okay, nothing special though. I normally have a very large stash of brown bananas in the freezer because all my bananas must be Slightly Green or I won't eat them.

Bish plese, dootnsult my butter talk2hand lol. But umm yeah, you can use whatever type of oil you usually use in cooking or if you don't use those, I'm pretty sure applesauce can be used as a stand in for butter.

Freaky that you would bring this thread up, I made Banana Bread last night and just had a piece for breakfast eek

Psh I will insult it all I want yo. XD I wonder if walnut oil would be good surprised but applesauce would be delicious!! I needs to try this.

If someone who enjoys baking also decides not to eat eggs, they shouldn't mess around with apple sauce or bananas as a replacement, eggs are a rising agent (completely necessary in most recipes) so there is an "egg replacer" which is a non-animal-based powder that you mix with water to add the same amount of Rising power to the recipe without using animal products.




Plus, it's cheaper than eggs lol
A box for $6-7 makes ONE HUNDRED "eggs". Isn't that crazy?


It doesn't work for every recipe though, I know for a fact it messes up no-flour peanut butter cookies (the animal proteins keep the cookie from turning into a puddle), and I have been told it doesn't work in cheesecake.
But muffins/muffin loafs like this, definitely. and 99.999% of cookies.

I'm going to have to look into that egg-replacement. I'm only a vegetarian. Not vegan. BUT I don't eat eggs or milk. It's only cheese. I have the hardest time giving up cheese. Hahahaha. So I'm vegetarian minus eggs & milk. Blegh.

I know you can use coconut milk in certain recipes to replace various things.
Certain oils too but I can't for the life of me remember which one . . .

I am going to have to try this recipe. Stumbling in here has left me with an intense craving for Banana Bread.

The applesauce is a replacement for butter not eggs. But thanks for bringing up that substitute, hopefully it helps people out.
