Not sure if you want retail or PSN games but I'll give you a list of my favorites.

Fat Princess (no one plays online no more but i like playing with AI)
I have yet to finish Drakes Uncharted and will soon get the sequel which I've read is the best PS3 game to date.

I'd suggest Valkyria Chronicles, it's an awesome game though it is based around war. Although not an FPS, its a strategy RPG that turns into a third person shooter when you command your individual units and takes place in an allegory of europe set in WWI verging on WWII with some fantasy elements added in.
Also one of the prettiest games around, resembling watercolor painting with colored pencil shading. It was heavily overshadowed by the release of MGS4.

And if you feel like importing, Tales of Vesperia PS3 (region-free, but in Japanese) is worth getting. If you've beat any of the other Tales games, you will be able to figure out the menus pretty easily.
