I have a hoard of a certain month's letter. The letter has a much lower buy rate (about 5 sold per day) than the item itself (about 60). Would it be a good idea to open all the letters for the item and then sell the item?

Depends. One small question:
Is the extra profit worth the extra time?
If you have all the time in the world to sell your letter then you can afford to wait for all the time in the world. However, if you need to sell them before a certain time for whatever reason, then you have to figure out how you'll be able to sell all of them within that time limit.
Even if you don't have a time limit, waiting for zero extra profit definitely isn't worth it. Depending on how much you're going to earn by waiting, it might be a better idea to sell them quicker and just reinvest in something else. If you're only getting ~5k extra, it might not be worth the time. However, if you're talking something like 100k then maybe you can afford to sit back for a while.
It's up to you to think about what you want to do though.

Because you can't reseal a letter, breaking that seal removes that collector value completely.
It's a very old tradition but that thinking still exists now. Just take a look at letter prices and you'll see that a good majority of them are more expensive than the items inside.

but even though it might not be called collector value, the concept is the same; you're paying that premium for that seal on the letter, not the letter itself.
EDIT: the difference between oldbies and newer users sure shows itself in weird ways. xd
