Anyone heard of symphonic metal? If so, what's your favorite band? And, what song do you like from that band?

Well, I contended with Grave on this a long time ago, and, in retrospect, he was correct. Most so-called symphonic metal bands are just gothic and/or power metal decorated to varying degrees with keyboard orchestration. The bands that can legitimately be called symphonic metal could likely be counted on one hand. The only two I can think of at the moment are Therion and possibly Apocalyptica.
That said, Therion is my favorite band that makes extensive use of classical instrumentation and composition techniques, if one wants to split hairs. I'm partial to almost all their work. I can't really pick one song, but "Clavicula Nox", "An Arrow From the Sun", "Via Nocturna", and "To Mega Therion" are some of my favorites.

And Therion is win. 3nodding

Rotting Gnarl Would you count Rhapsody of Fire to be of that ilk? That's a tough call, especially since I lack the necessary knowledge of musical theory to say with certainty. However, purely as my unprofessional opinion, I'd say they're power metal making extensive use of symphonic intros and interludes.

Ok then... What about Manowar in the recent times? Gods of War is half symphonic and half heavy metal.
Although when listening to it I rather think of this as music for some fantasy movie speaking of norse mithology or something similar.
