If there is anyone here that is knowledgeable about the chemical Capsaicin (C18H27NO3), I would like to know anything that you know because I am required to do Science Fair for my school this year and ever since finding out about the Bhut Jolokia pepper I have decided to create a project on something related to the hotness of hot peppers. With this in mind, I have decided that the best place to start is by finding out as much as I can about the chemical that creates the heat in peppers.

Hm.... Well, it's an organic compound- specifically an alkaloid. You can draw the Lewis structure for it, and maybe talk about the London forces (bigger than most other organic molecules). They're hydrophobic (doesn't like water), so that might have something to do with the spiciness in that water doesn't help? It's an irritant to mammals, but birds can eat it just fine, and that's how the seeds are spread; we also use it for a variety of purposes, some medicinal. And that's pretty much all I know- sorry. What sort of project were you thinking?

If you want to do an experiment, why not give some to people and see how they react?
I am an unfortunate recipitant of many peppers, including the Bhut Jolokia. Many of you will know that the Brits have a taste for Indian food, including the "curry", which is infamous but murderable. ("I could murder a curry!")
Hot food is hot, but very tasty.

Did you know that another name for the Bhut Jolokia is the Bih Jolokia or the Poison pepper. On the other hand, I've heard that besides the searing pain that the Bhut actually tastes quite good.
