Well there are some unofficial guidelines to go by!
This covers both CF and WW turnip price mechanics.

Stalk Market

Decreasing Pattern
This pattern is the one you want to avoid. It starts at somewhere between 70
and 90 in my experience, and continues to fall by 6, 5, 4, 3, or 2 each time.

Here are a few examples:

The Mountain
This is the big money maker. In this pattern, it starts off with a decreasing
pattern, then interrupted by two run-up prices, then the peak, the run-down
prices, then resuming the decreasing pattern.

The Hill
This one can still turn out a profit, but not as huge as the Mountain. But,
however, the time it is above Joan's usual price is (usually) longer. It is a
decreasing pattern, then a three price run-up, the the peak. It then has a
one-price run-down, then back to the decreasing pattern.

The Cliff
Yes, this one was quite unusual when it appeared, but upon further
investigation, it appears to be a oddity of the 'Hill' pattern.

I named this the 'Cliff' because of the rise, linger, then the sudden drop.
It is the Hill pattern because of the decreasing start, 5 high prices, and the
fourth one is the highest. It just happens that the two around it did not
increase or decrease.

Turnips are the main items in the Animal Crossing "stalk market".
They come in two types (white or red)
Turnips are bought from Joan the boar who walks around your town on Sunday morning from 6 A.M. to 12 P.M.

As white turnips are Animal Crossing's play on the stock market, Joan sells them for a different price every Sunday (90 to 110 bells). The number of white turnips you can buy does not have a limit, and each turnip will cost an average of around 100 bells. They are bought in quantities that are multiples of 10. Up to 100 turnips can occupy one item space (so, for example, if you buy 200 white turnips, two stacks of 100 will appear in your inventory). Stacks of white turnips cannot be separated like bells. (but two smaller stacks can be combined, e.g., put a stack of 30 onto a stack of 50 to get a stack of 80.)

After being bought, white turnips will rot at the end of the following Saturday, almost one week later. Rotten turnips have no value, but if they are left on the ground in town they can attract two bugs: ant and fly.

If you time travel to Monday from Sunday, the day you bought turnips, then time travel back to Sunday, your turnips will become rotten.
In Animal Crossing: Wild World, placing white turnips on top of a furnishing (e.g. a table) prevented them from rotting on a Sunday morning; this exploit was removed from Animal Crossing: City Folk/ Let's go to the City.

To make money off the white turnips, you sell them to Tom Nook. Similarly reflecting the stock market, he buys them for different prices everyday (except Sunday when the stalk market is closed). The prices he buys them at changes at 12:00 a.m. and 12:00 p.m. (Nook 'n' Go is open from 7:00 a.m. to 1:00 a.m.) To turn a profit you need to sell them for more than you bought them from Joan, so try to find a day where Nook has a very high buying price. Typically prices range from 30 to 600+ while actual prices range from 29 (verified) to 637 (verified). (Claims of 13 to 654 are reported.) "Time-travel" is adjusting the game or Wii time setting in order to take advantage of game mechanics. If you time travel forwards using the Wii time setting, the game will not detect it. Detected time travel results in rotten turnips.

You can also sell turnips in friend's towns over Wi-Fi, so if their Nook has a high buying price, ask to visit their town. Even if your friend has a different date in their town, the game will not consider it "time travelling" to visit, so turnips you bring will not rot.

You can also take turnips in your pocket using the DS suitcase. If you want you can "time travel" on the main game with a different character. You can then return with the turnips to your own town and they will not rot even if it is weeks latter when you return. One should note that there are only 15 slots in your pocket available for turnips.

White turnips in your possession can be left in your house or on the ground in your town. The former decreases your HRA score, and the latter negatively affects your environmental status.

A red turnip seed can be bought for 1,000 bells, though Joan only sells one each Sunday. Planted like flower seeds, fruits or saplings, buried red turnips need watering everyday or they will wither and be rendered worthless. Watering a withered planted red turnip with a silver can revives it: the following day it will act as though it had just been planted. A buried red turnip will grow a small amount each day. It can then be dug up with a shovel and sold to Tom Nook, who pays an amount of bells correlating to how long the turnip grew

Once a red turnip has been dug up, it will keep forever without spoiling (useful if Nook's is closed after the 6th day the turnip is buried because it means you can simply dig up the turnip and then wait a day until Nook's opens again).

I've been wondering, since the first animal crossing game all I ever do is sell fruit. (but I do make a pretty good payload, probably 250k every time I harvest) Are turnips a better option?

yes, because you can make alot more profit for alot less work. for example i can normally buy turnips at 100 bells, i get about 100k worth, then nook has days when he'll buy them for 300 bells each, this tripling my money instantly.

I think so, especially if you go to a town that has HIGH turnip prices.
For example, a few days ago I bought 150k worth of turnips. Later, I found a town that has 512 as the buy-back price. I pretty much got near 700k from selling them. <3
