I think Im going to go with either Skadi, Nott, or Snotra.
Gerriod is a cool Frost Giant, but he ended up getting killed by Thor. Thor is TERRIBLY overrated.
Angrboda is one bad momma, seriously she spawned Hel, Fenrir, and Jormungand.

I also dig Njord, though hes an old guy.
Basically I like them all except for Odin, Thor, Freyr, Freya, and sometimes Tyr. Because that's all everyone ever knows. Any kid with wikipedia knows these guys, but in my opinion the really cool gods, goddesses, giants, and creatures are the lesser known ones.

I'm not really a big fan of any of the gods or goddesses except maybe Idunna.
Though he's not a god and even though he is quite overrated, I like Fenrir a lot.
