I had just bought Harvest Moon DS Cute last week and I have found it very addicting and fun. My question is: Where is the mine that has the ores?

You have to unlock them. Equip your hammer and go into the dig site between 10 and 11 pm, and Carter should come in and tell you about a tunnel.
To unlock the other mines you have to get to the bottom of the one you unlocked, beat the monsters there, and then head back up. I usually end up unlocking the ore mine and the gem mine in the same night, since there's only ten floors to the ore mine.
