I would stalk Kakashi, but not in a follow-him-home-and-steal-his-socks kinda stalking. More in a I-hope-he-notices-me-someday kinda way (like Hinata; creepy, but cute)

Shikamaru, definitely. He's my favorite, and, unlike the others, he's too lazy to actually care that I'm stalking him and/or do anything about it.
I did actually stalk an amazing Shikamaru cosplayer at a con not long ago. Well, it wasn't really stalking. It was mostly me noticing her every time she was nearby (it was a very small con, so that was often), and going, "T////T *hides and stares, Hinata-style* DO WAAANT..."

I would stalk Zetsu because watching him eat is a once in a lifetime experience.
Or.. I would stalk Pein, for various reasons.. one of which would be to try to find out where else he has piercings. o.o Yeah, I went there.

I would stalk (unsuccessfully)... Itachi. But his super ninja senses would lead him to find me within the first 2 milliseconds. Damn.
What? I thought holding a leafy twig up in front of me while standing in front of a tree was good camoflague... emo
