Scallops with Pan Sauce:
I got this recipe from my culinary teacher at school.
Ingredients:
20 Scallops (small, preferably Fresh)
1 1/2 tablespoon Brandy
10 mushrooms
1 1/2 onions
2 tablespoons heavy cream
2 teaspoons butter
2-3 cloves garlic (or garlic butter takes care of that)
slice up your mushrooms and julienne the onions
pre-heat a pan on high, oil it, and brown the scallops on it.
remove the scallops, and in the same pan, with out removing the remaining juice or other stuff from the scallops, put in the mushrooms and onion in it, and cook those for a bit. Add the Brandy and burn it off (Don't do it under anything). Add heavy cream and reduce it by half. Remove it from the burner and add butter and garlic, and salt and pepper to taste.
