Well, if you want the most ethical and environmentally friendly milk try almond milk. You can make it from scratch at home or just purchase it in a container similar to soy or rice milk. I have yet to drink my almond milk.. but I bought some yesterday at Trader Jo's and I'll let everyone know how it is if you guys wanna know.

And I agree that tofutti cuties are better than milk-based ice cream (I heard the chocolate kind isn't nearly as good as the vanilla) and i know... I've been working at an ice cream shop for nearly 2 years. I also tried a different soy ice cream and it was no where near as good as toffutti.

Almond milk is good, but it can be kinda gritty, and it's sweet. Not too good for cooking.

You can make soy milk yourself, too. It's just a little harder.

You can make any milk you want at home, pretty much.

Does anyone know what the best overall alternative milk is for baking or cooking because I've made mashed potatoes once and the soy milk taste just came through so strong. I think once the problem was because I used vanilla soy milk xd , but I'm pretty sure I used regular soy milk and the taste came through a bit too strong.

I tasted the almond milk and it tastes good I think. It may be better for foods like mashed potatoes where the purpose of the milk isn't taste but to make the food creamier. I haven't tried rice milk yet and that seems like it would have the more subtle taste.

Oh yeah... I think 8th continent is the tastiest soy milk and it comes in a plastic container so you can recycle it too! biggrin But I think I'm gonna try and stick to almond milk because it kills less rain forests and in turn creates less habitat destruction.

Rice milk has an odd aftertaste. It's not that good for cooking.
Unsweetened soy milk works best, at least for me.

Hmm. I make mashed potatoes with soy milk, and I don't taste it at all, though maybe that's because I make very thick ones.

During my research making this topic I found many rice, almond, and soy milk products that were advertised as completely non-dairy (for the lactose-intolerant and people with milk allergies) but were not 100% vegan. Just be sure to read a little about all of the ingredients and manufacturing processes first before enjoying. 3nodding

i dunno what my parents would think if i went vegan...

besides, i've never met a soy cheese i liked, & they don't sell many vegan products down here at all. in fact, i have to go to a health food store waaay far away to get stuff like that.

I can imagine how being vegan would be more difficult for younger people who have access to fewer choices.

I can also imagine how soy cheese substitutes might taste bad if you're expecting regular dairy cheese. The taste is definitely different. But now that I'm accustomed to it I actually prefer it over regular cheese. 3nodding

I make a cheese substitute out of nutritional yeast that tastes pretty damn good. Goes well on pizza. It doesn't have the consistency of cheese though, it's more like a thick sauce.
