Sweet & Spicy Chicken over Rice Pilaf:
Ingredients: 1 Young Chicken 1 Tablespoon of Cajun Seasoning Pinch of Ground Cinnamon 1 Tablespoon Maple Syrup 1 Teaspoon of Honey 4 Servings of White Rice Boiled
Step 1: Cook 4 servings of White Rice until done to perfection. Drain & place in Oven-Safe Dish.
Step 2: Take legs & wings of the young chicken and sever them. Wash & place in an Oven-Safe Dish.
Step 3: Dry Rub Cajun Seasoning & Ground Cinnamon onto chicken followed by Honey & Maple Syrup last. Only use 1 Tablespoon of Cajun Seasoning due to the extreme flavor & spiciness that it provides, That is why I used 3 sources of sweet flavoring to even the flavors.
Step 4: Place dish into oven under 250 to 350 Degrees for approximately 45 minutes to 1 1/2 hours depending on over temperature.
Step 5: Take out of oven and serve. The juices of the chicken and marinade spices will coat the rice and flavor to perfection.
Ingredients: 1 6 Pound Duck (Unskinned) 1 Packet Orange Duck Sauce 4 Servings of White Rice Multiple Slices of Orange (Sliced Thin, Any Amount) 2 to 6 Cups of Water
Step 1: Take your grill, In my case an electric grill for inside use. Heat to perfected temperature.
Step 2: Take Duck(Thawed) and sever legs & thighs, Wash and place on a Grill at desired temperature, In my case an electric grill for inside use.
Step 3: Add 2 to 6 cups of water into grilling pan with duck to steam and cook duck quicker. Add orange slices onto duck pieces and inside grilling pan with water for flavoring purposes.
Step 4: Cook for 2 hours at a temperature of 350 Degrees or for 3 to 4 hours of 250 Degrees for a more tender and juicier meat. Occasionally add more water as pan will steam duck quickly using it's current water supply.
Step 5: Take a pot and boil 4 servings of rice until done to perfection.
Step 6: Take Orange duck sauce packet & empty into bowl and microwave for 2 minutes. Or optionally boil bag into pot with water for 5 minutes.
Step 7: After orange slices, Duck legs & thighs are completely done, Place inside a container with paper towel padding to absorb extra unwanted grease. let sit.
Step 8: Drain little grease from grilling pan, Drain rice from pot after it's cooked and place inside grilling pan. Spread evenly.
Step 9: Add 2 cups of water and stir every 3 minutes or so until rice is starting to fry. Cover for 10 to 20 minutes and reduce temperature to 200 degrees. Uncover and stir until your rice is completed to perfection. Add fresh new orange slices to rice and cook/stir for 5 to 10 minutes.
Step 10: Remove rice from grilling pan and onto plates. Add duck pieces onto plates with orange slices and serve with orange duck sauce (Optional).
