I can't seem to find any information about her
and I would like to know more. Other than Athena transforming
her into a gorgon and different stories about how she was
transformed into one because of her vain personality
or how she Poseidon pursued her and defiled Athena's temple.
I also read that she was a priestess before she was transformed
and there are a lot of stories that I don't know what to believe.

The thing about mythological figures is that they often have contradictions in their lore. There's nothing that says it can't be all of the above. Myths are, by and large, expressions of archetypes that describe the human condition.
