He's got tons of useful vids for newbies with knives in general, throwing or balisongs.
With the clanging off your target, try to only use soft wood or pressboard to throw at until you're better at getting a stick. Hardwood or anything painted or shellacked will more likely cause your first throws to deflect, causing a loud clang and no stick. I started off using a big chunk of Styrofoam from a refrigerator package when I was a kid and moved up to tree bark and then solid targets like blocks of wood or bullseyes. An old dart board is a good choice too, since it's made to grip sharp things penetrating it, but a knife does way more damage than a dart so make sure it's nothing new or valuable.
As for losing them in snow, *ahem*, keep your eye on the blade at all times when it is out of your hand!
