I try to use local ingredients whenever I can, especially since the only way to get things like Baby Spring Greens for my salads is to buy the organic ones that are grown near this area. Though I have never had moose myself, ken, I would imagine it is similar to venison in its taste, which is slightly gamy. 3nodding

Gamy?!? What does gamy taste like and what is a venison? Deer meat? Sorry, but I never tried animals with antlers before (not even goat or lamb). Just horny ones like cows. confused

Yeah, venison is deer meat. As far as how gamy tastes, if you have had dark chicken meat versus white, then it would be more like the dark. It is sort of like the woodsy flavor of mushrooms I suppose. neutral

Yeah, moose is rather gamy tasting meat. Bit like lamb but much stronger. The meat doesn't have much fat in it so making it is bit tricky. You need to prepare it with low temperature for a long time otherwise it'll get dry and though to eat. But if you get it right, it's absolutely delicious! Well at least I think so. Not everyone likes it because it's strong taste, but I like it.

I've never had a gamy meat, but Im a vegetarian. xd I'll try a taste if I ever have the chance.
