Techincally, any number of times, depending on when each ride ends.
I mean like, you can be like 5 meters from the coast and ride off into the sunset 2 inches, then stop, then do it again, etc.

well assume he travels until out of sight of the townspeople or until the sun has disapeared over the horizon.

Depends on his speed. He can't ride off into the sunset if he's going West at a rate faster than the sun is setting. Otherwise he'll eventually be riding away from the sunrise.

He'd be walking. Most cowboys trot into the sunset, not gallop. Assume they're moving at a slow jog.

What's the deal with the whole riding off into the sunset anyways? Wouldn't it be more reasonable that they'd be riding to the nearest saloon to knock back a few?

Stupid lousy glitch or something in Fable 2.
For some reason, simply learning an expression added corruption to my character, apparently just because there's a townsperson looking at me when I do it. If I'm all alone or something, no corruption. I don't get it.
