A Jedi manipulates the Force through his unusually strong connection to it. The Force binds all living things, so it stands to reason that a Jedi would have to be alive to "use" the Force. In one of the books, there were a number of skeletons that were animated through the dark side of the Force, but even they couldn't have used the Force themselves.
Yoda would still win.

The ghost of Exar Kun was able to use the force, and obviously light jedi spirits were able to linger on, since Obi-Wan, Yoda, and Anakin were all able to visit Luke after dying. Therefore, so called "sentient undead" maintain their connection to the Force. Zombies, though, are "mindless undead" according to most modern interpretations, and without the actual spirit/soul of the jedi present, an animated body (zombie/skeleton) would itself have no more control over the force than, say, a rock.
