Well if an answer is really that important... I'd say Sega is more old school from my perspective. They were both a bit before my time as far as videogames are concerned but when I look back at classic games the figures that really outshine most of the others are Mario and Sonic. Atari doesn't have a figurehead like that which gives me the oldschool vibe when I pick up one of their newer titles.

Sega also existed before Atari was even founded, so it technically is more old-school. "Standard Games," then "Service Games" (which later became Sega) was founded in 1940, while Atari was founded in 1972.
