Ryu is at fall day 13 year 1 and has the following seeds unlocked:
Cabbage - plant on farm in spring without fertilizer to get red cabbage, ship 30 to unlock a new seed. If you use cabbage fertilizer, you can get huge cabbage, ship 20 of those.
Celery - plant these in winter to unlock white celery, ship 10. Plant celery in summer using celery fertilizer to get mystic herb. Ship 20 to get the seed.
Onion - plant these in spring and ship 10 scallions in order to unlock the new seed.
Strawberry - plant these in winter and use fertilizer to unlock white berry
Tomato - plant these in summer on the mountain top to get san marzano. Ship 10 san marzano to unlock the seed. But plant them anywhere in the winter using the tomato fertilizer to get crimson. The official guide is unknown to how many to ship. In that case, do the shipments in incriments to know exactly. So start with 10, if that does not unlock the seed, ship 20. The max will be 50.
Corn - plant these on the farm in summer to get fodder corn and sweet corn. Ship 10 fodder corn to unlock the seed and ship 20 sweet corn to unlock that seed.
Green pepper - plant these anywhere in summer using the pepper fertilizer to get the red pepper, ship 10 of those. Plant these on the farm only in summer to get orange pepper, ship 20 of these.
Wheat - plant these in the mountain meadow (before the blacksmith shop, but north of farm) in the summer to get durum wheat, ship 10. Plant these on the farm during fall (goal right now) to get barley, ship 20 of these.
Hot pepper - Plant on the farm in spring to get jalepeno and ship 20. Plant on the mountain meadow in fall (goal right now) to get habanero, ship 10.
Potato - Plant these anywhere during the fall to get giant potato ship 20 (another goal for right now). Plant these on the mountain meadow using potato fertilizer during winter to get purple potato and ship 10.
Carrot - Plant these in the swamp during summer to get brown carrot and ship 20. Plant these on the farm during winter to get baby carrot and ship 10.
Pumpkin - plant these on the farm during spring to unlock squash and ship 20. Plant these on the swamp in the summer to unlock zucchini and ship 10.
Spinach - Plant these on the farm in spring to get savoy spinach and ship 20. Plant these in the swamp using spinach fertilizer in the winter to get baby spinach and ship 10.

On fall day 24 year 1, Ryu unlocked Broccolini and habanero seeds.
For Broccolini - plant these in the summer on the mountain top to unlock evergreens and ship 30 evergreens to unlock the seed. Plant these anywhere in winter using the broccoli fertilizer to unlock romanesco and ship 20 to unlock the new seed.
For Barley - Plant these on the mountain top in winter using the wheat fertilizer to unlock Rye and ship 30 of the new crop to unlock the seed.
For Habanero - Plant these anywhere during the summer using the pepper fertilizer to get devil pepper and ship 50 to unlock the new seed.

On winter day 6 year 1, Ryu has the following new seeds:
White Celery - Plant these on the mountain meadow in winter using celery fertilizer to unlock royal herb. Ship 30.
Baby Carrot - plant these on the farm in the winter using carrot fertilizer to get white carrot. Ship 30.
Purple potato - plant these on the swamp in the summer using potato fertilizer to get black potato. Ship 20.
Blueberries - Plant these on the farm during winter to get black currant. Ship 30. Plant these on the swamp during winter using berry fertilizer to get cranberries. Ship 10.
Watermelon - Plant these on the mountain meadow in the summer to get cannonball. Ship 20. Plant these on the mountain top in the summer to get mellow yellow. Ship 10.
Asparagus - plant these in the spring anywhere except for the swamp to get baby asparagus. Ship 10. If you use the asparagus fertilizer on the mountain meadow during the spring, you can get purple asparagus. Ship 20 of those.

For spring year 2, as long as you have passed the game, you should be able to plant the following:
Asparagus - anywhere in spring save for the beach to unlock baby asparagus. Ship 10.
For Ryu specifically, this is the additional stuff he should be planting:
Cabbage - plant on the farm in spring to get red cabbage and ship 30, but add cabbage fertilizer to get huge cabbage and ship 20 of those.
Onion - plant these on the farm in spring to get scallions. Ship 10.
Hot Pepper - plant these on the farm in spring to unlock jalepeno peppers. Ship 20.
Pumpkin - plant these on the farm in spring to unlock squash. Ship 20.
Spinach - plant these on the farm in spring to unlock savoy spinach. Ship 20.
Nowhere else should he be planting anything yet. He needs to unlock asparagus fertlizer, but in order to do that, he must complete Dean's questline. And right now, Dean needs watermelon, which Ryu had best plant those in the summer.

So far in Spring of year 2, Ryu Hoshi has unlocked:
Scallion seeds.
He is working on the others he can unlock. Such as red cabbage, huge cabbage (at the same time), petit onion, jalepeno (no success yet on getting one of those peppers), squash, savoy spinach, and baby asparagus.
He cannot unlock the purple asparagus since he does not have asparagus fertilizer and he cannot unlock magic pepper since he does not have orange pepper unlocked yet. I am pretty sure that my other farmers will be farther than him in terms of mutations by the end of year 1. He is doing awesome in terms of his tool upgrades (he finished that), in terms of finding his mate, and his animal collection. He is waiting on his cotton sheep Banjosplatooi to give him great cotton candy wool twice in order for him to get the final upgrade of his house.
In terms of the repairing of the village, he has to repair I think two bridges on his farm still maybe just the one, and one bridge in the swamp. He has unlocked all warp points, so he can go anywhere. Oh, and there are water wells, a fertilizer bin, and a windmill to repair also.

Ryu unlocked the huge cabbage seeds.
For Huge Cabbage you wanna plant those in winter and use the cabbage fertilizer. This way you get dome cabbage and ship 50.
Then for squash, you wanna plant it winter on either the mountain top or the mountain meadow. You can unlock cream pumpkin and ship 50 of those. And you can plant squash in summer and plant them anywhere, but I am going to suggest doing the mountain area whether that be the top or the meadow to unlock giant squash and ship 20 of those.
