You can use stamina potions, which you can receive through battle rewards (they probably will put an option where you can purchase some) or you can put your pet to sleep, wait for a bit, then wake it up and it should had received more stamina.

I won a Willocroak after one of my battles. I went away for a few minutes/reloaded and it showed up so I can now use it. Dunno about any of the starters though.
