I guess that's an easy question, so don't blame me... I'm new to the market~
If I buy an Evolving item. And this evolving item is, let's say, 3rd Gen. What does it mean?!
How fast will it evolve? Or will it even evolve? Is a 1st Gen more valuable than a finished one?

Well, a lot of your question is dependent on if the item is still active.
When an EI is released, it is the first gen. When a regular ei evolves, the previous generation leaves the cash shop and a new one enters with the same poses as the previous one had. Each generation evolves at the same rate as the first, and finishes at the same rate, usually. Each gen. gains the poses of the previous one till it finishes, when all poses are unlocked. Currently, the modus works this way.
Rapid EIs, or REIs, work differently. They retain all poses through it's active timeframe. Once done, a second generation with all poses is released to the CS. Lady Jayne is an REI that is still active, when it finished, the one in the CS will be changed to second generation.
With both, if another generation is released after the original is finished, it will have all poses like the original, as will Alchemized versions. The exceptions to this so far have been Silver bells, Gary's Island and Titan's legacy.
Lastly, Long term EIs, like the current Bunnihilation, retain all poses like REIs, but take months to evolve, often only gaining a couple poses. These EIs are gap fillers in EI reports, usually gaining a pose when no REI or EI is active on a Friday.
In terms of usage, once an EI's generations have all finished evolving, there is no useable difference between them. They will all have the same poses. First gens tend to sell better while active, and the cheapest generation is usually acceptable after finished work is released.
