Franz - Of course! And yes, all gryphons will have a caste symbol on their cert during each stage of development to let you know which caste they're in. They are born into their castes (with the exception of Lampkeepers and untouchables) so that's also a good indicator.

Bouncy - It's possible that a gryphon's color might become slightly lighter or darker as he or she grows up but it wouldn't change too dramatically.
