No need to start in with a rant about how you can't unsoulbound rings, these are already not soulbound and I know the whole deal.

But lets say I wanted to level them up before selling them - can I do that without making them soulbound? As a side note, am I wasting my time doing that to sell them, will they just go for the same amount without being leveled?

Yes you can. Just don't switch the CL levels of your soulbound rings with your non-soulbound one.
