It's actually not finished yet - since fishing only came out yesterday, the feature's not had all the kinks worked out yet.

Hopefully it will be up soon, until then you can sell your fish for gold.

how?

when you go back to the fish shop after a saved game you will have fish in your inventory. click on the fish, a pop up will ask you how many you want to sell. sell them and logan the fisherman will give you gold for them.
