Once the manuscript is finished, before you send it out to anyone else, send a copy to yourself, so that it has franked postage, which clearly shows the date on it. Better yet, send it recorded delivery, so that there is a precise time when you received it.
Then, if anyone ever tries to copy your work and pretend it is theirs, you can bring the unopened envelope into court and the judge can see that your version of the book predates the other person.
