Review: Castleberry's American Original Beef Stew
We have all heard the buzz surrounding delicious and healthy meals that can be created in just 30 minutes or less. As a working mother sometimes I don't even have 30 minutes. Instead of turning to unhealthy fast food or costly restaurant-fare, I turn to my repertoire of delicious, healthy, and incredibly quick 15 minute meals. These 15 minutes meals can honestly be prepared and on the table in 15 minutes or less. For all you busy parents and career-minded individuals out there, here are five healthy and tasty meals that can be prepared in 15 minutes or less.

Almonds Almonds are a filling and healthy snack. I like to add them to a salad of mixed greens. They are also delicious added to vegetables or beef and pumpkin stir fry stir fry. However, like all nuts, they do contain a good amount of fat so limit yourself to one handful per day.

Then, my daughters were diagnosed with epilepsy. I did some personal research and put them on a gluten-free, dairy-free, diet. How was I going to feed them? Converting to cooking all natural had helped in this quest and so I dug deep and made up my own gluten-free recipes, which included Homemade Beef Stew. Had it not been for their illnesses, I probably would not have discovered this recipe through trial and error. I was ready to give up on beef stew. It turned out great and was a scrumptious gluten-free recipe that met their needs.

I let the stew cook for an hour or so on high and then I taste it and start to season. It will need some salt, pepper and garlic powder. I also add some beef and pumpkin curry bouilon cubes and some onion soup mix as well. At this point you can also add some frozen corn and green beens or whatever else you want.

Heat 2 teaspoons of oil in a nonstick skillet over medium high heat. Once oil is just smoking, add onions; cook for 2-3 minutes until softened beef and pumpkin stir fry starting to brown slightly.

Gingerbread is a marvelous dessert for acid reflux sufferers. Find a recipe that uses canned pumpkin and wheat germ. Make it with unsweetened applesauce and low-fat buttermilk. Then resist the temptation to mound whipped cream on top of it! Try a low-fat imitation whip instead.

In a Dutch oven, brown the bacon over medium heat until browned. Remove beef casserole with dumplings a slotted spoon and transfer to a bowl. Add in the beef cubes and brown on all sides. Add in the onions and continue to cook for a few minutes until the onions are softened. Add in the beef broth and seasonings, and bring to a boil. Reduce heat and simmer for about an hour. Add in the chopped potatoes, carrots and celery and continue to cook for another hour to hour and a half until the beef is tender and the vegetables have been cooked through. Check seasonings and adjust if necessary. Serve.
