So Easter this year was pretty uneventful. When you have two (nonreligious) adults with busy schedules living together Easter becomes just a lucky day that the both of you have off. Granted if either one of us had nieces or nephews Easter would have been a whole different story but since we don't Sunday was all about relaxing, sleeping in, and marathoning Game Of Thrones since we hadn't finished the second season. There is on thing I did do though, late Saturday night/early Sunday morning I decided to do some baking. You see I bought these cool Easter egg silicon molds and made mini cakes (three lemon with cream cheese frosting and three strawberry), on a side note I really need to learn patients because when a recipe says wait until something cools before demolding it they aren't kidding around. Only one of the lemon cakes survived into fullness.
For the frosting I just bought a tube of pink mixed with purple and used a fine tip. The chocolate frosting on the strawberry cakes was from one of those aerosol frosting cans you can pick up in the baking isle of pretty much any super market, wasn't really impressed with it taste and handling wise. If you want the recipe for the lemon cake (it was a scaled down cupcake recipe) I will post the link to it. The original will make about a dozen regular sized cupcakes for the egg cakes I cut the recipe in half.
