Nice! Those are some fun picks so far. c:

If this is only for ingame play, you can really use any pokemon you like in the last slot. Grab one of your favorites, or choose a rarely-used 'mon for fun.
That said... It looks like your current five might have some trouble with rock type attacks; consider making your sixth something to help counter that? Maybe a physically bulky something.
I am not at all qualified to give team advice, hhaaa

Hmm how about a Pokemon that can help you get rid of entry hazards? Since it looks like spikes, stealth rock and all will hurt your team. So maybe a ground type that has rapid spin?
Depends on which ones you want but so far I like these three with rapid spin.
Donphan, Excadrill, and Forretress.
They can set up some hazards for you and take down some nasty types that can hurt your set up. Also Donphan, and Forretress are huge on Physical defense. Which Your team lacks on Physical defense I noticed. Umbreon does have good Physcial Defense but it has better sp Defense. So if I were you, I'd use Umbreon and either Donphan or Forretress as my defense. Pikachu and Crobat to set/mix things up. And it looks like Typhlosion, and Gyarados are your sweepers. Unless you have something else in mind?

I usually have this as my set up for Donphan/ Forretress
Donphan:
Move 1: Rapid Spin
Move 2: Earthquake
Move 3: Knock Off
Move 4: Ice Shard /or/ Stealth Rock /or/ Toxic
Item: Assault Vest /or/ Leftovers
Ability: Sturdy
Nature: Adamant
EVs: HP:172 Atk:252 Spe:84

Forretress:
Move 1: Rapid Spin
Move 2: Spikes /or/ Stealth Rock /or/ Toxic Spikes
Move 3: Volt Switch
Move 4: Gyro Ball /or/ Toxic /or/ Venoshock (Venoshock if your using Toxic Spikes)
Item: Leftovers
Ability: Overcoat /or/ Sturdy
Nature: Relaxed
EVs: HP:252 Def:252 SpA:4

Hope this helps smile
Oh also a Idea since you have Crobat, it could out speed quite a bit so you could run Venoshock on it which it would do more damage then Forretress which could take out a lot of the opponent's team. It would seem then Toxic Spikes will be really helpful to you.

Oh, I was going to mention the lack of defense.. but you got to it before me.

since your team is mainly squish you need a SERIOUS DEFENSIVE pokemon.

One who's only purpose is to not die; you will need it since most of your pokemon are weak to the most commonly used moves

Earthquake, rock slide.

As for how you would use your team.. Keep in mind that your pokemon you use as Switch in counters aren't typically known as bulky. Don't expect to switch in on rock slide with Gyrados and not take a notable damage.

Since youre playing Soul Silver you dont have the wonderful options Gen 6 offers.

Here are your options:
weezing <-Levitate
Lanturn <- makes you more weak to ground
Wobbuffet <- My favorite pokemon
Tangrowth <- bulky grass type
Vaporeon < Bulk water type
Donphan < rapid spin
skarmory < the King
Porygon 2 < Bulky sp.sweeper (needs evolite)
Blissey < The Queen

Noteable mentions:
Dragonite
Tyranitar
Lugia
Suicune
