Simple veggie soup

Roughly chop two carrots/2 parsnips/2 onions/4 radishes/several mushrooms (whatever kind suit your taste)/ four baby red potatoes/ and two cans of chicken or veggie stock. Cook till a boil and yum comfort food. whee

Organic veggies arent that cheap around here so I don't get to have this very often.

hm.. interesting. I still love my Spagetti. (did I spell that right?? gonk )

ground beef
two cans of tomato sauce
one can of tomato paste
seven to eight shakes Chili powder
Garlic powder
two pinches of Oregino (I can't spell)
one tomato can of water
and any type of noodles you want
(sorry I don't know exact measurments, I usualy keep mu eyes on it and know my instinct when its enough)

First cook Ground beef intill cooked all the way through. Then drain thje grease from the pan and add the tomato sauce and tomato paste. After you stir alittle you add the spices. boil noodle water. stir and let simmer for about 10-15 minutes. while simmering stir and add noodles to boiling water. (makes sure it boils) When your sauce is done I'd take alittle taste test to make sure.

I take one 8oz container of cool whip and add one box of instant pudding mix, preferrably chocolate, mix well and frost a cake with it... The kids love it and it is easy to make.

I guess I'm simple. Well, maybe not as simple as SOME of you, but I don't need a seared lamb shank rubed with thyme every day.

Basic Risotto (soo goood biggrin )

6 cups chicken stock
1/4 cup extra virgin olive oil
1/2 cup chopped yellow onion (though white works fine)
2 cups Arborio rice
1 cup dry white wine, at room temperature
1-2 tablespoons unsalted butter
salt and pepper to taste.

In a saucepan over medium heat, bring the stock to a gentle simmer and maintain over medium heat.

In a large, heavy saucepan, heat the oil over medium heat. Add the onion, and sauté until softened, about 4 minutes. Add the rice, and stir until each grain is coated in oil and translucent with a white dot in the center about 3 minute. Add the wine and stir until it is completely absorbed.

Add the stock ladleful by ladleful, stirring continuously after each addition. Don't add the next ladleful until after the stock has almost completely been absorbed. Make sure it is never dry. Keep 1/4 cup stock to add at the end.

When the rice is almost tender on the outside, and firm on the inside, and looks creamy, after about 20 minutes, take the rice off the heat and stir in butter to taste. Season it with salt and pepper, serving immediately for best results.
---------------------------------------

Now if you read that, and know what risotto is, then I bet you're asking "Where's the cheese?" This risotto is so creamy it doesn't need cheese, so don't add it in!

ONE LAST THING I SWEAR!!! The main flavor is butter, so make sure its not only unsalted, but the best you've got.

I think I have only had one bologna sandwich in my life and I know it wasn't fried.

I love peanut butter. K laughs at me all the time about it. Though I think I eat it in moderation (about a jar every two weeks). Too bad they don't make the crunchy in the big jars.

Oh, but I'm also picky about it too. It basically has to be Peter Pan. I tried the off brand at my MIL house. It didn't even taste like the same food. I almost didn't get the first bite down. I kind of looked around to see that nobody was looking and wrapped it up and threw it out. Nasty. Oh, and I don't really like jelly either. I just like peanut butter on whole wheat bread... yum. Sometimes I put on bananas and honey for a nice bit of sweetness to it.

This isn't my new favorite dish.. in fact, I'm not sure I'd call it my favorite dish.. I'll put it this way: I wouldn't turn it down. whee

2 Toaster Waffles
1 Egg
1 Slice of American Cheese
1 Thin Slice of Tomato (optional, and if you use it.. use a meaty tomato, with a tender skin)
Some rosemary (or garlic powder), and pepper

Heat up a pan, grease it well. Drop a little bit of water in the center of the pan, if it sizzles exuberantly the pan is ready. It's important for the pan to be hot, you want the egg to sear. Righto.. So crack your egg into the center of the pan, and then put the waffles into the toaster to toast. If you want, dust the top of the egg with rosemary and pepper, or garlic powder, or chili pepper for all I care. Depending on how you like your yolks, you can flip the egg any time. The ideal egg for this sandwich has the yolks cooked mostly, but with enough liquid to ooze out of the yolk - man.. Eggs are a friggen science, I think I'll write an essay on them... ANYHOW. Flip your egg when you think it's ready, put the american cheese on top, and turn off the heat. When the cheese is melty, transfer the egg to the toasted waffles, apply the tomato slice. ENJOY.
