So I got a third controller to play 3 player on GoW, and plugged it into the usb port on the back, but its not registering that its plugged in.
And can you even play 3 player on GoW?

No you definitely cannot. The console would not be able to render the visuals of that game in three differen't screens without severe graphical downgrades.
Only two players my friend sadly.

This is one reasons I really give CoD3 for. It's an excellent guest game. I have a couple friends over we usually play CoD3 rather than any of my other games.

This is the one thing i hate about this Gen. There seems to be a extreme lack of 3-4 player multi player games. that was one of the great things about last gen, being about to bring a couple of friends over and play some four player halo or something
