Ah, here is one I am pretty sure all you guys will love (supplied by Jedi Junkie).
El Taco Casserolo
Ingredients: 1lb Ground Beef 1 package of taco seasoning 1 can refried beans 1 can black beans 1 can chili/kidney beans 1 can olives (optional) 2 cups shredded mexican or cheddar cheese 16oz of Medium Salsa Chopped green pepper or anything else you like on tacos. 10 (or more) Tortilla Shells
Instructions: 1. Preheat oven to 360º and prepare a rectangular casserole dish - clean, grease and line it with tortillas. 2. Cook the ground meat till it's no longer pink, add the taco seasoning to the meat. While the meat is cooking, open all the cans. Strain the black beans, kidney beans, and the olives. 3. Drain the meat. 4. Mix together the black beans, kidney beans, olives, salsa, and green peppers. 5. Slap on a layer of refried beans onto the tortilla shells (trickier than I make it sound! ), then slather on some of the bean mixture, top with meat, top with cheese, top with tortilla shell. Repeat. 6. Cover with aluminum foil, and shove into oven. Bake for about.. erm... About 15 minutes? Then take the foil off, crank it up to 400º and bake for 10 minutes or until bubbly. If it isn't bubbly I screwed this recipe up and you may smite me.

Notes: I contacted Jedi about this to make sure that I had this correct. A couple of things to keep in mind while doing this. There are two layers of refried beans (and every other layer)Doing a layer of tortilla shells is suggested to keep the top layer of cheese from sticking to the aluminum foil. However, if you leave it off, it just makes it extra crispy. Have fun. wink

Review
Prep:
Prep was extremely easy, but it could have easily gotten messy. If you don't clean your stuff right away, you will end up with several large bowls that are dirty around. But ease of putting this together was a huge plus.
Presentation:
This came out great with the distinct layers and it stayed in shape. This was especially true when heating this back up. Definately something that is not that messy to eat.
Taste:
This was extremely good. I seemed to prefer it fresh, but it was almost as good reheated. This is definately something that you could make and then freeze half of for later.
Score: On a low/medium/high scoring system, I rank this high.
