Since last week was an entree, I wanted to do something different for this time.

Cake Mix Cookies


These are easy and can be made to suit almost anyone's tastes.

Ingredients:
1 box of cake mix-any flavor
2 eggs
1/4 cup of oil
2 tablespoons water

Add-ins: Chocolate chips/peanut butter chips/M&Ms/raisins/nuts...be creative

Directions:
Preheat oven to 350 degrees F. Grease cookie sheets. (Not necessary with Air bake pans.) Mix the cake mix, eggs, oil, and water together. You may need to add more oil and water depending on the cake mix. The batter should be about normal cookie dough consistency. Fold in your add-ins. Bake for 8-12 minutes.

Some of my favorite combinations:
Yellow cake mix w/ chocolate chips and peanut butter chips
Spice cake with Heath Bar toffee chips
Chocolate cake mix with peanut butter chips

I've also done strange things like added cream of wheat or oatmeal to the recipe. It's really a fun recipe to play around with, and it's good to do with kids. I've been making these since I was in elementary school.

To tell you the truth, K and I can't really remember. But we are thinking just over 2 dozen. It can probably be streached out to 3, depending on the size of the cookies.

Well, I made them last night, here goes my review...

They were good, but not really what I expected. I was expecting cookies like you normally make. It was hard to work with the dough and to dishthem out even with an ice cream scoop I used. I used the yellow cake mix and chocolate and peanut butter chips. I think it was the difference between cake and cookies. One uses baking powder the other baking soda.

It was yummy, don't get me wrong, but I probably wouldn't make it again. It would be easier for me to make a regular sugar cookie recipe and use the add ins. Or take the refridgerated cookie dough to work with.

Although I did get an idea to make some cupcakes with the cake mixes and work with addins from there!

What does this mean? What is the consistency of cookie dough? And better yet, do you add oil and water based off of what is on the box or what you posted?

You don't add it according to the box. The box instructions are for cake, not cookies. Cookie dough batter is quite thick. You'll want to add a little more water and oil (more oil than water) until you can get all of the dry ingredients mixed in well but not much more than that.

I wonder what the difference was. For me it is usually easier to work with than say the roll and bake Pillsbury cookies. Though I do agree that these may not be for everyone. We usually just use a regular teaspoon for the table or even an ice tea spoon.
