I'm entering a cooking contest (i hope this is allowed) and I'm making a dish based on my family heratige. Its a carribean dish. kinda, mostly. Its gonna be a beef roll that is based on a West Indian stuffed beef dish that my grandmother was taught as a child. Were still working on the sides though. Maybe fried cassava, and some other stuff. Any tips?

how about some mint or mango chuttney (from India) and some nice rice with a vegetarian korma or sambara with it.
