I vote that salt and pepper are spices. At least that is what the ancient Chinese use to call them. I tend to think of condiments as more of a creamy consistency (like mustard, mayo, etc.). There may be a difference, but that's just what is in my mind. blaugh

There may be a difference, but that's just what is in my mind. blaugh Well, I'd say a condiment is anything you add after cooking. So salt could be a condiment, it just depends on when you use it.

I believe that most spices tend to come in a powdered form, and make for good long term storage, but herbs are usually whole or crushed leaved of a plant, and condiments are usually a seperate sauce added later for personal flavoring.

Spices are usually dried.
Condiments are usually not. (usually... not always)
Timing is whatever your tastes and the receipes call for... during or after making the meal.
Atleast that's my personal take on the whole thing. wink

Icysnowgirl New Question! What spice or flavoring do you like to add to almost any of your main dishes? I personally am rather fond of garlic salt.... >.>;; Garlic. Pure fresh garlic. I use it pratically all my cooking^^ You can never have too much garlic. No...wait..I remmeber one time I was cooking garlic mashed potatoes, and that's the only time I used two much garlic. The recipe called for one clove, but I was like, "Nah, that's too little." So I end of putting in 6 cloves and killing my family. sweatdrop
