I think you go to the online lobby, go to multiplayer options, and set any new roster updates.
...For Madden on my Wii, it just asks you if you want to save the new roster updates, each time you log on.

Yeah, you need internet online connection to get the automatic roster updates. Well, you can still do it manually, but that'll take you a really long time. Just go to player management and sign free agents and do trades.
