Basically you put the eggs in the pan, then lift up the edges letting the uncooked middle run under the omellette. Do that till it's firm, then put on your extras and fold it, then cook both sides. Or you can take it out, add your extras, fold it, and microwave it, which is much easier. There are some other ways of doing it, depending on the omellette type, but for your standard ones this'll do.

actully theres different styles the french provioncial way is my fave but its really hard to describe on here youd have to see it.. i can try though you put the heat low and use a wide pan with the sides just curve up slightly. you put the eggs in( should be seasoned already when you beat them:: thena using your spatula you gentluuy pull the inside outward so that the bits just barely geting touched will be put to th sides.. you do this till its slightly solid and add your ingrediatnes..fold it over ..then add sme butter to the free side of the pan and tilt it so it melts down and under the omlet..flip it b..well you just have to lern the flip the one side should hv beautifl dark squgles from the butter and then brown slightly on that side and slide it on tothe plate..seve imediatly

I don't know why you'd want a flat omelette... But you just need to overcook the eggs to achieve that. o_O

At my home when we make omelettes we heat the pan up quickly on a high heat. Beat together 2-3 eggs, pepper, rosemary, and a touch of garlic powder. Lower the heat on the pan, spray with non-stick, and then pour the eggs in. The eggs get a crispy golden outer crust using this method, some people might call it scorching, I suppose.. But I like it. whee We toss on our filling, tomatos, peppers, onions, mushrooms ( gonk ), and lastly cheese. After a minute or two we then 'flip' the omelette. You slip your spatula under a conveniently crispy and solid half of the egg, and turn. You should end up with a half moon shape.


If you want to be fancy and french you can fold your omelette into thirds, and cook it on lower heat.

How to fold?It gets stuck to the pan and when i fold, it gets cut into pieces...
I am not a good cook...

Perhaps the heat is too high, and the eggs stick because of that. Try putting some butter in the bottom of the pan to grease it up.
