Well the king usually has the Kingsguard with him at all times.
Plus Sansa isn't a character like Arya and will probably never be like that.
Sansa doesn't have to kill him to win tho, she just needs to survive and find happiness. <3

There wasn't much more they could do to be creative, other than him visibly tearing at his throat to breathe. Because that'd be changing the story.
