Well for one Damascus steel has always been overrated, blades forged today with cutting edge technology are far sharper and more durable then anything ever thought of way back when.
It wasn't a katana, just a simple switchblade, I grew up on very very bad streets and was involved in several knifings. I know the sound and feeling of air escaping from a mans lung when you puncture it. It's not pretty.
Yes bone is much harder then ballistics gel, however what makes gel much harder to cut with a sword is that it offers no hard resistance, yet at the same time has incredible soft resistance because of it's tendency to spread out the impact of whatever is hitting it much like a gravitational field when hit by solar flares. Thus the force is pushed around rather then through making it far more difficult to cut cleanly unlike skin. Bone provides hard resistance which is easier to cut because it is solid with a soft inside, once the outer shell is smashed the marrow within will give way and thus be cut.
And when I said scalpels I meant the more common surgical steel kind. I know all about obsidian (The Mayans often employed large clubs called Maquihuitls covered with obsidian shards and were quite fond of the substance) there would be no point in making a katana from obsidian as it would shatter and chip with relative ease.
Bullets are a whole other story when it comes to human vs ballistic gel debate. A bullet will often stop inside a human body sooner because of all the internal factors ballistics gel doesn't have, organs, muscles, etc. A sword like the modern katana is made to cut through these things, a bullet is made to simply destroy and mutilate once inside, not to CUT. Two completely different purposes.
You answered your own question with the whole pig carcass test. Yes they gut and hang it but that doesn't mean it couldn't cut through a live pig, if they made a video of such they know they would be sued and threatened by PETA into oblivion. All that excess internal junk is not needed, the muscle and bone is still intact and that's what counts. Bone is hard but not as hard as you are giving it credit for. It is also porous and with a fairly soft inside which makes it possible to sever cleanly.
If bone was 100% solid then you would be right, but it isn't and has already been cut by the blade a countless number of times.
I didn't just state a testimony. I stated a FACT that ballistic gel cannot be compared to real human flesh. Ever try stabbing that stuff with any sort of blade? I have, it gives quite a bit of resistance, unlike human flesh (Which I have also stabbed) which cuts quite easily, a good blade will sink and cut through human tissue with ease.
Once again, ballistic gel is not even close to the consistency of real flesh, for christ sake it can absorb high caliber bullets that would otherwise go clean through a human! The fact that a katana can go half way through a ballistic gel torso only proves how ******** deadly of a weapon it is. If that was a human torso it would have been bisected CLEAN.
Another scientific fact: The closest thing to human flesh and bone is that of a pig. There are plenty of videos which I'm sure you can find of a katana completely bisecting a fresh pig carcass. Hence a human would not offer much more resistance.
Listen, I take back what I said before because you obviously have an erudite knowledge of this subject. But to be fair, not nearly as much as I, and not nearly as much experience as I have had with it. I know what I'm talking about, you can ask any expert on the subject and they will confirm this. A good modern shinken katana can easily cut through a human with the right technique and application of strength.
Ever see how easy it is for a surgical scalpel to cut through flesh? There are katana these days just as sharp and twice as sturdy. They are no longer the brittle, fragile weapons of old, quite the opposite!

Comparing ballistics gel to human skin/flesh is a fallacy even the experts know that. Ballistics gel is made to ABSORB the impact of bullets and blades, human flesh is not!
There are many eye witness accounts of blade testing on humans as well as first hand accounts from warriors who fought first hand in the field and saw what a good katana could do.

Read up on your ancient Japanese history. They would use katana on the still-living bodies of convicts to test the cutting power.
There were classifications for certain blades depending on how many human bodies it could cut through at one time! One body blades, two body blades, there were even five body blades!
Obviously they do not do this anymore but it is HISTORICAL FACT.
Katana were designed specifically for the purpose of cutting cleaning through flesh and bone.

But IT IS A FACT. Have you ever used a Cheness katana? The makers of those blades personally state how easy it would be to dismember a human being with one. You can't ban me for something you have no clue about. There are plenty of videos showing the cutting power of a Cheness, see for yourself!
I have cut through thick blocks of sturdy wood far more tough then human physiology with my Cheness and it hasn't so much as chipped or blunted in the least.
