The United States, being the beautifully diverse place that it is, is blessed with many ethnic food options. Some cuisines have stayed fairly loyal to their origins. Korean and Vietnamese food in the United States tastes pretty similar to Korean and Vietnamese food in Korea and Vietnam. Some ethnic cuisine, on the other hand, has become so popular that it has developed its own flavor in the United States. Italians and Chinese would probably hardly recognize the food attributed to them.

Of all the different types of food the United States has to offer, almost none show quite the level of diversity as Mexican food. With Italian food, you could go into an Italian restaurant in Texas and expect to get similar fare to what you might find at an Italian restaurant in California. The same cannot be said for Mexican food. Not only have American adapted Mexican food to our tastes, several different regions of the country have specialized in particular flavors and types of Mexican food.

In California, you will find Mexican food that is fresh and full of citrus flavors. They are not afraid to use vegetables and even make Mexican food that is completely vegetarian. Seafood is also very popular. Fish tacos are a favorite and a classic example of California Mexican. Mexican food from this region is also known as "Baja Style" or "Fresh Mex".

Further east in New Mexico, Mexican food is characterized by locally grown chili peppers. They are famous for their red and green chili sauces. Some dishes that are famous here are stacked enchiladas and sopapillas. You may also hear of New Mexican style Mexican food referred to as "Southwest Mexican".

Probably the most famous regional Mexican cuisine is Tex Mex. While some people use the term Tex Mex to refer to any Mexican food that is not "authentic", it actually refers to a specific style of Mexican food found primarily in Texas. Texans like their Mexican food to be spicy and cheesy. Beef is often a main ingredient in dishes like fajitas and chili con carne.

Many traditional, authentic Mexican food restaurants do exist in the United States, and many regional style Mexican restaurants serve traditional dishes. Some examples of authentic Mexican cuisine are tamales, mole, menudo, and chile relleno.

You don't have to visit a restaurant to have good Mexican food though. Most of the ingredients are readily available for you to make tasty Mexican food at home. I have searched the Internet and found some excellent recipe sites for all different types of Mexican cuisine. Please have a look through them. Hopefully you will find something you like!
