Your spices and herbs will lose some of their flavor when exposed to light, humidity and heat. For most grounded herbs and spices keep a lot of their flavor more than a year. Spices that come in the whole form will keep their flavor for around 3-5 years. Proper storage is essential to maintaining fresh, robust flavors.

Store your spices in a cool, dark place. Storing them out in the light and heat will cause them to lose some of their shelf life. Keeping your spices in darkened, cool areas will lend extra longevity and flavor. Using fresh spices makes meals even more delicious.

When not in use, put your spices in an area that receives the lowest amount of light and heat. Shelf life can be significantly decreased for those spices which have been exposed to too much light, dampness and heat. When a spice is placed in a cool area with very little light, its life is extended and it will taste better. If you use fresh spices, your food will taste better.

To easily slice meat thinly, place it in the freezer until firm but not frozen. This is the perfect technique when you are making Thai or Chinese food. The meat holds a tighter form when the it is partially frozen making the strips clean cut with out any stretching of the meat. However, always thaw your food before cooking it.
