Today was a fantastical journey, not much happened but I went to a holiday concert. Not a rock concert but an orchestra. I went to essentially the same one last year. This year they had a very large children's choir with kids as young as first graders. And one of the violinists two kids got up on stage in the most adorable elf costumes. They play wonderful music. I hope I go to their concert next year.
So to match this happy day, here is another great recipe for you all....
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 cup sugar
¾ cup butter or margarine (1 ½ sticks), softened
1 large egg
3 tablespoons milk
2 teaspoons vanilla extract
1/3 cup favorite seedless jam
Preheat oven to 350F. On waxed paper, combine flour, baking powder, and salt.
In large bowl, with mixer on medium speed, beat sugar and butter until creamy. Add egg, milk, and vanilla; beat until well blended. On low speed, beat in flour mixture just until blended.
Drop dough by rounded tablespoons, 2 inches apart, onto ungreased cookie sheet. Bake 6 minutes. Remove cookie sheet from oven. Working quickly, with greased rounded measuring teaspoon or large end of melon baller, gently make a small indentation in the center of each cookie, making sure not to press all the way through. Fill each indentation with rounded ½ teaspoon of jam.
Return cookies to oven and bake until edges are browned, 12 to 14 minutes longer. Transfer cookies to wire rack to cool.
