I got bored and did a little poking around in the Jigsaw Puzzles again. Here's what I came up with.

Easy (30 Pieces), First Try: About 2.33 Minutes - 43 Gold
Easy (30 Pieces), Second Try: About 2 Minutes - 28 Gold
Easy (30 Pieces), Third Try: About 2 Minutes - 35 Gold
Easy (30 Pieces), Fourth Try: About 2 Minutes - 35 Gold

Normal (70 Pieces): About 8.25 Minutes - 98 Gold
Hard (120 Pieces): About 1 Hour - 129 Gold
Insane (300 Pieces): Around 2 Hours - 427 Gold

So if my math is not terribly incorrect, you can make about 2,100 Gaia Gold from Easy Puzzles in the time it takes you to complete a single Insane Puzzle. I have but one word for that.
