So over the past two years since my college graduation, I've tried exploring a wee bit more than usual in the culinary realm. Not only have I been trying to make different meals, but I also have wanted to bake more. Sure, I whip up the old fudge recipe for Christmas, but I've tried being a little more experimental. So far, off the top of my head so it's not every recipe I've used, I've made:

- Zuppa toscana
- Avocado chicken salad
- Red snapper topped with chopped spinach, tomatoes, mushrooms, and sundried tomato vinaigrette
- Several eggs in a basket
- Shrimp risotto
- Chocolate cream pie
- No-bake cheesecake (this was last weekend, with the help of my girlfriend)
- Breaded catfish
- Gazpacho
- Fish tacos
- Guacamole
- Bangers and mash

Given that my dad's pre-diabetic, I haven't exactly whipped up the classic spaghetti and marinara or the carbs that often. Which means more variety in my diet, as well as healthier options! Well, except for the fudge and pie and cheesecake, but those are delicious, so no judgment is allowed.

I have also become more culinary in the

I've made a lot of chicken dishes, most
recently chicken stuffed with onions and
fontina cheese that I also made a sauce
for. It turned out really well.

I have also become good at making salsa
and guacamole since my boyfriend bought
this magical food processor.

Oooh, guacamole! Had to add that to my list. I made some killer guacamole for the Super Bowl this year. No food processor for me, though. I just scoop out the avocado, season it, and mash it up with a wooden spoon. Like a boss. cool

I'm better at baking than cooking, but my mom gave me a super easy roast chicken recipe where you roast the chicken on top of chopped onions and make french bread croutons, and then you pour sliced chicken, onions, and the juice on top of the croutons. SO GOOD.

I'm better at baking than cooking, but my mom gave me a super easy roast chicken recipe where you roast the chicken on top of chopped onions and make french bread croutons, and then you pour sliced chicken, onions, and the juice on top of the croutons. SO GOOD.

Man, that chicken was so delicious.

Lately, I've been cooking up desserts about 2-3 times a weeks... With my big family, they get snatched up quickly! I'm that damn good at cooking... ^.^

Everyone's favorite was what I call my Coffee Mousse. There were no leftovers after my sister's birthday, and I made enough for almost everyone to have three servings... ^.^

Coffee Mousse is definetly going to be what I make for the bake sale I'm hosting with one of my only friends... ^.^

It's more like Mocha or Cappuccino Mousse, but I have been asked to make more tonight. I'll give you some... ^.^

I'm actually keen on making more dessert drinks myself. I had something called a Hot Apple Pie at my local pub. Tuaca, Hot Cider, Cinnamon, and whipped cream. It was pretty damn glorious.

The mousse would sound so good if I was a bigger coffee fan. Mea will take care of the helping I don't eat, of course. xd

I'm not a big coffee fan, either. Hell, I hate coffee, but I like it. ^.^

Yeah, I can't drink coffee alone, or even in mochas or mixed drinks without alcohol. But somehow, in solid desserts or booze? Something changes.
